Brighton is not known for fancy meals, but hidden inside the line of greasy fast food you can find the best chicken fingers in Utah! They are probably frozen and come to the resort in big mega budget boxes, but they are incredibly good. They are about 4 inches long and 2 inches wide and you get three of them in your little paper tray. The chicken looks like perfect breast meat and is coated with a nice crumb crust. If you have to completely ruin your healthy eating plan, you may as well have something that tastes and looks as good as these chicken pieces at the main cafeteria at Brighton. Don't forget to grab lots of mustard or ketchup for dipping!
Park City Since we are talking about mountain lunches, we won't even touch all the amazing meals you can find on Main Street. At the resort base, Baja Cantina is an excellent Mexican restaurant. The prices are affordable and the abundance of good food provides a lot of choices. The Baja has a Quesadilla verde for $7.49. It is a meal in itself, with melted cheese, spicy pork chile verde and sour cream folded and served with guacamole. This spot also serves huge vegetarian Tostadas. And offers $8 combo meals that allow you to choose any two enchilada's tacos, or a tamale or relleno.
Snowbird is a resort touting several fine restaurants with great food and often, high prices. But, here are two favorite things to eat at this resort that are very inexpensive! The first one takes you into the Forklift Restaurant. The Forklift is right on the Plaza deck across from the Tram loading area. You can sit by the fireplace and watch the world go by out the windows. For only about $7, you can order what is called the Fiesta Taco Salad. It is incredibly good. The salad is served in a tortilla bowl that is very edible! Inside, you have wonderfully flavored black beans!, lettuce, tomatoes, shredded cheddar cheese, black olives, salsa and sour cream. If you don't like any of the items you can have yours made without certain ingredients and the waiters/waitresses don't seem to mind a bit. The second favorite Snowbird lunch is the pizza place on the second floor of the Snowbird Center. This spot probably provides you with the cheapest lunch at this resort, but it is also very yummy pizza! It is also very fattening. Most of the pizzas offered are loaded with cheese, so you may want to stop here on day two of serious skiing!
Solitude When you ski or snowboard at Solitude, you just have to eat lunch at the Creekside because it is so incredibly good! Even though this is a beautiful restaurant with white tablecloths and incredibly tasty food, there are several hearty items on the menu that won't break your budget. However, this is the one resort where the Ski News team always digs out the credit card and splurges! The recommended splurge is the Lobster Pasta! You get linguine pasta graced with big chunks of lobster and sauteed veggies. The veggies are usually bright and colorful pea pods, artfully sliced carrots and mushrooms and any other vegetables that are fresh. Even the parmesan cheese sprinkled over your meal tastes like it just arrived from Italy and was freshly grated just for you!
